On Friday I made beans by simply opening a can and microwaving its contents in a bowl.
This was a little sad for a man who has long been proud of my weekly bean stews and what I call my "strategic bean reserve," the containers of cooked beans I usually have socked away in my freezer.
On Friday, instead, I 'made' refried beans with tortillas, some black bean veggie burgers, salsa, and some salad mix.
The beans were just okay - of course I can do better - but the complete meal was delicious, and it was so wonderfully simple to prepare with a 3 year old wanting to help in very simple ways and also demanding more attention than would have been easy to satisfy if I were chopping veggies, working a pressure cooker, etc.
