The other night I zapped dinner for M and me.
I'm a from-scratch kind of guy, and I've always looked at the stacks of microwavable meals (Lean Cuisines, Trader Joe's Chana Masala) in the work freezer and think about how much money those people could save if they just cooked and took leftovers to work.
Still, if this is a year of cooking less, I'm going to have to start microwaving more.
I couldn't quite pull it off, though. I still have some of that very recent tempeh I made in the freezer (I still have a LOT of it, actually), so I thawed, sliced, and fried it while I was zapping the pasta with mushroom sauce and the romanesco and cauliflower in basil butter.
The zapped pasta was shockingly good, and the veggies were veggies - good if not fabulous. M absolutely LOVED the tempeh, though, shoved some of the veggies in her mouth, and picked the mushrooms out of the pasta.
